Maple Tahini Ice Cream Sandwiches



Enjoy these delicious vegan ice cream sandwiches, which are made with a rich mixture of maple syrup and tahini and two soft chocolate chip cookies.

Ingredients:

  • 2 cups coconut cream
  • 1/3 cup maple syrup
  • 1/4 cup tahini
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 12 vegan chocolate chip cookies

Instructions:

In a bowl, combine coconut cream, maple syrup, tahini, vanilla extract, and a pinch of salt

Mix until well combined

Pour the mixture into a shallow container and freeze for 4-6 hours, or until solid

Once the ice cream is frozen, scoop it onto 6 cookies and sandwich them with the remaining cookies

Optionally, roll the edges of the sandwiches in crushed nuts or shredded coconut for extra flavor and texture

Serve immediately or store in the freezer until ready to enjoy
