This is a simple and tasty chicken and rice recipe that doesn't take much work but tastes great.
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups white rice
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a large skillet, heat olive oil over medium-high heat
Season chicken breasts with paprika, thyme, salt, and pepper
Add chicken breasts to the skillet and cook until golden brown on both sides, about 5 minutes per side
Remove chicken from skillet and set aside
In the same skillet, add diced onion and minced garlic
Cook until softened, about 3 minutes
Add rice to the skillet and cook, stirring frequently, until lightly toasted, about 2 minutes
Pour in chicken broth and bring to a boil
Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked through and liquid is absorbed
Return chicken to the skillet and cook for an additional 5 minutes, or until heated through
Serve chicken over rice and enjoy!
