Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegan butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup vegan chocolate chips
Instructions:
Preheat oven to 350F 175C
In a medium bowl, whisk together flour, baking soda, and salt
In a large bowl, cream together softened vegan butter, brown sugar, and granulated sugar until light and fluffy
Mix in applesauce and vanilla extract until well combined
Gradually add dry ingredients to wet ingredients, stirring until a dough forms
Fold in vegan chocolate chips
Using a tablespoon, scoop dough and roll into balls, placing them 2 inches apart on a lined baking sheet
Bake for 10-12 minutes, or until edges are lightly golden
Remove from oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely
