Ingredients:
- 8 large eggs
- 1 cup diced bell peppers
- 1 cup diced mushrooms
- 1 cup diced spinach
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Cooking spray or butter for greasing
Instructions:
Preheat oven to 350F 175C
In a bowl, whisk together eggs, heavy cream, salt, and pepper
Grease a 9x13 inch baking dish with cooking spray or butter
Spread diced bell peppers, mushrooms, and spinach evenly in the baking dish
Pour the egg mixture over the vegetables
Sprinkle shredded cheddar cheese on top
