Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions:
Put olive oil in a big skillet and heat it over medium-high heat
Add the minced garlic and chopped onions and saut until the onions are clear
After you add the diced red bell pepper, cook for two more minutes
Add the shrimp and season with salt and pepper
Cook for about 34 minutes on each side, until the shrimp is pink and opaque
Take the shrimp out of the pan and cut them into small pieces that are easy to eat
Add one flour tortilla to the pan and cover it with a layer of Monterey Jack and cheddar cheese
Place some of the cooked shrimp on top, and then cover with another tortilla
For about two to three minutes on each side, cook until the bottom tortilla is golden and the cheese melts
Do it again with the rest of the filling and tortillas
Take the quesadillas out of the pan and let them cool for one minute
Then cut them into wedges
Put sour cream and chopped cilantro on top while it's still hot
