A hearty and comforting soup with a Spanish twist. It has sweet corn, smoky paprika, and a creamy texture.
Ingredients:
- 4 cups corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 medium potatoes, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp smoked paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Put the onion and garlic in a large pot and cook them until they are soft
Put in the red bell pepper and cook it until it's soft
Add potatoes and corn kernels and mix well
Add the chicken broth and heat it up
Turn down the heat and let the potatoes cook slowly until they are done
It's time to add the heavy cream and smoked paprika
Add pepper and salt to taste
Serve hot with fresh parsley chopped on top
